The Wonderful Thing about Brownies are that Brownies are a Wonderful Thing

Healthy eating for your brainiac child does not have to resemble punishment. On the contrary. Take these brownies for example. They are 100% delicious, and 100% nutritious. How can that be you ask? Well, there are no grains, no sugar, no gluten, no dairy, no nuts (unless you want to add them), and absolutely no fuss. I gave them to my kids for breakfast this morning knowing that they will be full, have a steady blood sugar level, have energy all day, and have all the nutrients and fats their bodies need to grow and learn. Their behaviour will be alert and calm because they did not eat any ingredient that would make them hyperactive, tired, or distracted. They will easily be able to focus and learn.

I too had some, of course. These brownies are awesome and satisfy any sweet craving or hunger, without having the sugar "high", and then the inevitable tired "low". They do not negatively affect focus, and, to boot, they encourage the body to be in fat burning energy mode all day!

I, honestly, can not think of a tastier "treat". And they are so very easy to whip together! Even my six year old can (and usually does) make them!

Brainiac Energy and Focus Giving, Gluten Free, Dairy Free, Sugar Free Brownies

Set oven to 350 degrees and line a loaf pan with unbleached parchment paper.

  • 1c black beans (NO CANNED BEANS.... unnecessary toxins)
  • 1/3c seeded dates (soak at least 1-2 hours if hard)
  • 2 tbls raw cocoa powder or raw cocoa nibs, ground
  • 2 large pastured and grass fed eggs
  • 2 tbls olive oil
  • 1/2 tsp baking soda
  • 1/2 tsp raw apple cider vinegar
  • 1/2 tsp real vanilla (no artificial)
  • 1/8 tsp sea salt
  • 2 tbsp cocoa nibs 
  • 1/4c walnuts (optional)

Put the top 9 ingredients (excluding the nibs and the nuts) in the Vitamix, Nutribullet, or blender. Blend until smooth. Stir in nuts if desired. Pour mixture into parchment lined loaf pan. Sprinkle cocoa nibs on top. Bake for 30-35 minutes. Grab the ends of the parchment paper and lift the brownies out of the pan. Cool on a rack. 

Allow your child to enjoy and be alert and focused all day!

Sometimes I go one healthy step farther and add in some chia seeds, one tsp of maca powder, ashawanganda powder, or even ground chaga mushrooms..... the taste remains delicious and no one suspects a thing ;-).

Experiment with your own superfood powders for extra nutrients in this absolutely delicious treat (or breakfast). Your child (and you) will love them!
